Pimm’s Cup

2 oz Pimm’s No. 1

3 oz ginger ale

Cucumber

Pour Pimm’s into glass with ice.  Top with ginger ale.  Garnish with a lemon wheel and a cucumber slice.

Pimm’s is an intersting mix of spice, fruit and gin.  Very easy to mix with and gives an intriguing flavor.

Picon Whiskey

1 oz bourbon

1 oz Amer Picon

1 dash simple syrup

Shake and strain.  Garnish with a lemon or orange twist.

Basically an Old Fashioned, the Amer Picon does an amazing job accentuating the flavors of the bourbon.

Picon Punch

1.5 oz Amer Picon

1 dash grenadine

Soda water

Float of brandy

Coat inside of 16 oz glass with grenadine.  Add Amer Picon and ice.  Top with soda water and stir.  Float brandy and garnish with a lemon twist.

Nice simple to make drink with a complex flavor.

Picon-Limon

1.5 oz Amer Picon

.5 oz creme de casis or grenadine

.5 oz Rose’s lime juice

Soda water

Stir first 3 ingredients with ice and strain into an ice filled 16 oz glass.  Top with soda water and garnish with a lime twist.

A nice cooler for a hot day, cold and bitter and sweet.

Picon-Curacao Highball

1.5 oz Amer Picon

.75 oz curacao

Soda water

Shake and strain Amer Picon and curacao into a Collins glass filled with ice.  Top with soda water and garnish with a lemon squeeze.

I find Amer Picon a bewitching flavor, and the sweet orange of cuarcao goes nicely with it’s bitter orange.

Negroni

1 oz gin

1 oz sweet vermouth

1 oz Campari

Shake and strain.  Garnish with an orange slice.

Pretty much perfect just the way it is.

Kiss-Me-Quick

2 oz Pernod

2 dashes Angosture

3 dashes curacao

Shake and strain.  Garnish with a lemon twist.

Might want to add some simple syrup if using real absinthe, the curacao alone doesn’t quite temper it.

Dubonnet Fizz

2 oz Dubonnet

.5 oz cherry brandy

1 oz orange juice

.5 oz lemon juice

Soda water

Shake first 4 ingredients and strain into a highball glass.  Top with soda water and garnish with a lemon twist.

Nice balanced flavor with both tart and sweet, with a little bitterness.  Most fizzes seem to be summer drinks but this is a bit more substantial with more body (like the Amer Picon Fizz).

Black and Tan

1.5 oz sweet vermouth

.25 oz Pernod

.75 oz creme de casis

Shake and strain.  Garnish with a lemon slice.

Too much sweet vermouth for me, the absinthe and casis don’t quite subdue it.

Amer Picon Fizz

2 oz Amer Picon

.5 oz lemon juice

.75 oz grenadine

1 tsp egg white

Soda water

Dry shake all but the soda water and then shake with ice.  Strain into a chilled tumbler and top with soda water.  Garnish with a lime squeeze.

I’m using Jamie Boudreau’s Amer Picon recipe.  This is a beautiful Halloween cocktail, with deep brown topped with a faintly orange foam.  This Amer Picon is a great ingredient with a bold balanced bitter orange flavor.
